30-Minute Italian Pasta and Veggie Dish with Progresso® Cannellini Beans - a quick and delicious dinner option!
Ingredients:
  • 8 oz. (3 cups) uncooked rigatoni (pasta tubes with ridges)
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 large carrot, finely chopped (1 cup)
  • 1 garlic clove, minced
  • 1 (15-oz.) can Progresso™ Cannellini Beans, drained, rinsed
  • 1 (14.5-oz.) can diced tomatoes, undrained
  • 1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes
  • Dash pepper
Instructions:
  • Cook rigatoni according to package instructions until perfectly al dente. Drain the pasta.
  • Heat oil in a medium saucepan over medium-high heat until hot, then sauté onion, carrot, and garlic for 5 to 6 minutes until tender, stirring occasionally.
  • Add all the remaining delicious ingredients, excluding the rigatoni, and lower the heat to a gentle simmer for 5 minutes or until everything is piping hot. Serve this flavorful sauce over the rigatoni for a satisfying meal.
