Family-friendly holiday cocktail with homemade cranberry syrup, tonic water, and pomegranate-infused ice cubes.
Ingredients:
  • 8 teaspoons pomegranate seeds
  • 8 teaspoons fresh red currants
  • 1 cup chopped cranberries
  • 0.5 cup water
  • 0.5 cup white sugar
  • 3 cups popped unsalted popcorn
  • 0.5 cup dried cranberries
  • 6 cups tonic water (such as Fentimans), chilled
  • 1 lime, cut into 8 wedges
Instructions:
  • Arrange 1 teaspoon of pomegranate seeds in half of the wells of a 16-cube ice tray and red currants in the other half. Fill each well with water and freeze for 8 hours or overnight.
  • In a saucepan over low heat, gently simmer chopped cranberries, water, and sugar, stirring occasionally, until cranberries are completely softened, approximately 15 minutes.
  • Pass the cranberries through a fine mesh sieve, gently pressing to release the liquid. Allow the syrup to cool before covering and refrigerate for 8 hours or overnight.
  • Thread popcorn and dried cranberries onto a clean needle, alternating between the two. Cut into 8 equal strings.
  • Place a pomegranate ice cube and a red currant ice cube into each glass. Pour 2 tablespoons of syrup into each glass, then add 3/4 cup of tonic water. Finish by garnishing with a lime wedge and a string of popcorn and cranberries.
