Cheesy spinach and artichoke dip, a creamy and flavorful delight.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, chopped
  • 1 small onion, chopped
  • 1 small red bell pepper, chopped
  • 1 pinch Italian seasoning, or to taste
  • 2 tablespoons all-purpose flour
  • 0.5 cup dry white wine
  • 1 cup canned chicken broth
  • 0.5 cup half-and-half
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 1 (14 ounce) can artichoke hearts in water, drained and chopped
  • 3 cups shredded mozzarella cheese
Instructions:
  • Combine olive oil and butter in a saucepan over medium heat. Sauté garlic, onion, and red bell pepper until onion is translucent, about 5 minutes. Season with Italian seasoning and cook for an additional 2 minutes. Sprinkle flour over the mixture and stir well. Pour in white wine, bring to a simmer, and cook until liquid is reduced by half, 7 to 10 minutes.
  • In a saucepan, bring the chicken stock to a boil. Add the half-and-half and simmer until it starts to bubble. Stir in the spinach, artichokes, and mozzarella cheese, cooking until the cheese is completely melted, around 5 minutes.
