Whip up a quick and delicious steak salad for a healthy dinner option.
Ingredients:
  • 500g farfalle pasta
  • 45.50 gm olive oil
  • 600g beef rump steak, trimmed
  • 2 bunches asparagus, trimmed
  • 115.00 gm walnuts, toasted (see note)
  • 250.00 ml flat-leaf parsley leaves
  • 23.40 gm wholegrain mustard
  • 20.00 ml tarragon vinegar
  • 61.88 gm whole-egg mayonnaise
  • 58.75 gm sour cream
  • 20.00 ml chopped chives
Instructions:
  • Boil pasta in a large pot of salted water according to packet instructions until tender. Drain and transfer to a bowl. Toss with 2 tablespoons of oil and let it cool. Enjoy!
  • Preheat your barbecue grill on high heat. Brush the steak with oil and season with pepper. Grill to your desired doneness, about 3 minutes per side for medium. Rest the steak on a plate covered with foil for 5 minutes. While the steak rests, grill the asparagus for about 3 minutes until tender. Cut the asparagus into thirds before serving.
  • Prepare a flavorful mustard mayonnaise dressing by combining mustard, vinegar, mayonnaise, sour cream, and chives in a bowl. Season with salt and pepper, then mix until fully blended.
  • Slice the steak thinly across the grain. Combine the sliced steak, asparagus, walnuts, and parsley with the pasta. Drizzle dressing over the mixture. Season with salt and pepper, gently toss to combine, and serve.
