Try using vibrant surprise peas in pasta and risotto for a burst of flavor and color that stays.
Ingredients:
  • 50g packet surprise dried peas
  • 400g farfalle pasta
  • 18.20 gm extra virgin olive oil, plus extra to drizzle
  • 1 small onion, finely chopped
  • 100g pancetta
  • 300ml thick cream
  • 1 lemon, zested, juiced
  • 62.50 ml finely sliced fresh mint leaves, plus extra to serve
  • 250.00 ml freshly grated parmesan
Instructions:
  • Simply simmer the surprise peas in a saucepan of cold water until they reach desired tenderness according to packet instructions.
  • Cook the pasta in a large saucepan of boiling salted water according to package instructions until just tender. Drain both, saving 1/2 cup of the pasta cooking water.
  • In a large frying pan, heat the oil until shimmering. Add the onion and pancetta, cooking over medium heat until the onion is softened and the pancetta becomes crispy.
  • Combine garlic, cream, lemon juice and zest, mint, and reserved cooking water in a pot. Mix well. Add pasta and peas, then toss. Sprinkle half of the parmesan, season to taste, and toss again.
  • Garnish with the rest of the parmesan, fresh mint, and a drizzle of oil before serving.
