Colorful red lentil soup with Middle Eastern flavors made with olive oil, onions, cumin, and pepper, pressure cooked and blended with herbs. Finished with a squeeze of lemon and parsley.
Ingredients:
  • 2 cups red lentils
  • 1 onion, chopped
  • 4 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground black pepper
  • 1 (1 ounce) package dry onion soup mix
  • 1 lemon, juiced
  • 0.25 cup chopped fresh parsley
Instructions:
  • In a pressure cooker, combine lentils with enough water to cover them by 1 inch. Add onion and oil. Pressure cook for 10 minutes, then allow it to rest for an additional 10 minutes before serving.
  • Puree lentil mixture, cumin, and pepper in a food processor or blender until smooth.
  • Pour the pureed soup into a large stock pot and heat it up. Just before it boils, mix in the onion soup mix, stirring until fully incorporated. Simmer until the soup reaches a thick, creamy consistency.
  • Enhance the dish with a splash of zesty lemon juice and a sprinkle of fresh chopped parsley for a burst of flavor and a beautiful finishing touch.
