Fennel and radish salad

No-cook, fresh and colorful fennel and radish salad - a light, gluten-free option.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 42.00 gm lemon juice
  • 1.25 gm caster sugar
  • 1 Lebanese cucumber, peeled into ribbons
  • 1 bunch radishes, trimmed, thinly sliced
  • 1 small fennel, thinly sliced
  • 1 oakleaf combo lettuce, leaves torn (see note)
  • 40.00 ml chopped fresh mint leaves
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • In a large bowl, combine oil, lemon juice, and sugar. Stir until sugar is dissolved. Season with salt and pepper. Add cucumber, radish, and fennel, and toss to combine. Let sit for 5 minutes.
  • Gently fold in crisp lettuce. Sprinkle with fresh mint and parsley. Ready to serve.
