Lemony pepper butter adds flavor to vibrant stuffed peppers, perfect for enhancing any meat dish.
Ingredients:
  • 12 fresh chives (at least 6 inches long) or green part of green onion, cut into thin strips
  • 2 medium red bell peppers
  • 2 medium green bell peppers
  • 1/3 cup water
  • 1/4 cup butter or margarine
  • 2 teaspoons finely shredded lemon peel
  • 1/2 teaspoon lemon-pepper seasoning
Instructions:
  • Place fresh chives in a shallow dish and cover with boiling water until just submerged. Allow to sit for 10 seconds to soften, then drain thoroughly and set aside.
  • Cut each pepper into eighteen 3x1/4-inch strips. Place 3 pepper strips side by side on chive, top with 3 more pepper strips, tie chive around bundle, and repeat with remaining pepper strips and chives.
  • Combine all Lemon-Pepper Butter ingredients and heat until the butter is melted, stirring occasionally; set aside.
  • Place the bundles in a 10-inch nonstick skillet and pour in water. Bring to a boil and cook for about 1 minute until they are crisp-tender. Using a slotted spoon or pancake turner, transfer the bundles to a small serving plate and drizzle with Lemon-Pepper Butter. Serve right away.
