Cherries Jubilee-Black Pepper Glazed Ham

Festive Christmas ham roast with cherry glaze - a show-stopping centerpiece.
Ingredients:
  • 1 fully cooked smoked bone-in ham (10 to 12 lb)
  • 1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 2 jars (12 oz each) cherry preserves (2 1/4 cups)
  • 3/4 cup brandy
  • 1/4 cup cider vinegar
  • 3 tablespoons coarse-grained mustard
  • 3 tablespoons cane syrup
  • 1 tablespoon freshly ground pepper
  • Additional coarse-grained mustard
  • Fresh cherries and fresh sage sprigs, if desired
Instructions:
  • Preheat your oven to 275°F and line a roasting pan with foil. Take off the skin from the ham and trim the fat to a 1/4-inch thickness, then make shallow cuts in a diamond pattern 1 inch apart. Put the ham in the roasting pan and pour broth into the pan.
  • Combine preserves, brandy, vinegar, 3 tablespoons mustard, syrup, and pepper in a 2-quart saucepan and bring to a boil over medium-high heat while stirring constantly. Lower the heat to medium-low and simmer for 5 minutes, continuing to stir, until the mixture slightly thickens. Set aside half of the cherry mixture in the refrigerator for later use. Brush the ham with the remaining cherry mixture.
  • Bake the ham on the lowest oven rack for 4-4.5 hours or until the meat thermometer reads 140°F, basting with the cherry mixture every 30 minutes. Allow the ham to rest for 15 minutes before slicing.
  • Top the ham slices with tangy mustard and the reserved cherry mixture. Finish by decorating with juicy cherries and fresh sage leaves for a delightful presentation.
