Feta and spinach pide

Stay in and enjoy homemade vegetarian pide for a delicious treat.
Ingredients:
  • Olive oil, to grease
  • 375g (2 1/2 cups) plain flour
  • 1 tsp (7g/1 sachet) dried yeast
  • 2.40 gm salt
  • 250ml-300ml lukewarm water
  • 18.20 gm olive oil
  • Plain flour, extra, to dust
  • 1 large bunch (about 500g) English spinach, stalks trimmed, leaves washed
  • 400g Greek feta, crumbled
  • 4 eggs, lightly whisked
  • Freshly ground black pepper
Instructions:
  • Prepare the pide dough following the instructions for the basic pizza dough with the specified quantities.
  • Prepare the filling by steaming the spinach until just wilted. Once cool, squeeze out any excess liquid, chop finely, and mix with feta, egg, and pepper in a bowl until well combined.
  • 1. Preheat the oven to 200°C and prepare 2 large (or 3 smaller) baking trays with non-stick baking paper. 2. Divide the dough into 6 equal portions, cover 5 portions with plastic wrap. 3. Roll out 1 portion of the dough on a lightly floured surface into an 18cm by 26cm oval shape. 4. Place one-sixth of the spinach filling down the center of the dough. 5. Pinch the dough together about 5cm along each end to enclose the filling. 6. Fold back the dough in the center, about 1.5cm on each side, leaving the filling exposed. 7. Transfer the pide to the lined tray and repeat with the remaining dough and filling. 8. Cover the trays loosely with a clean tea towel and let them sit for 30 minutes to prove.
  • Bake the pide in a preheated oven, switching trays halfway through, for 20 minutes or until golden brown. Serve hot.
