Try these flavorful Greek-style feta roasted potatoes for a delicious twist on a classic side dish.
Ingredients:
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon Greek seasoning
  • 2 teaspoons kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground thyme
  • 4 large russet potatoes, peeled and diced into 1-inch cubes
  • 3 ounces crumbled feta cheese
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Mix together olive oil, balsamic vinegar, lemon juice, Greek seasoning, salt, pepper, garlic powder, oregano, and thyme in a large plastic bag or bowl. Toss in the potatoes until they are evenly coated.
  • Spread the potatoes in a snug, single layer in a spacious baking dish.
  • Bake in the preheated oven for 40 minutes, stirring every 10 minutes, then top with feta cheese and bake for an additional 5 minutes. Serve.
