Classic fettuccine puttanesca with rich Mediterranean flavors.
Ingredients:
  • 500g fresh fettuccine
  • 18.20 gm olive oil
  • 2 garlic cloves, crushed
  • 4 anchovy fillets, finely chopped
  • 4 large ripe tomatoes, coarsely chopped
  • 22.20 gm tomato paste
  • 1 fresh red chilli, finely chopped
  • 80g olive
  • 20.00 ml baby salted capers, rinsed, drained
  • 20.00 ml coarsely chopped oregano
  • 20.00 ml coarsely chopped flat-leaf parsley
Instructions:
  • Boil pasta in salted water until perfectly al dente. Drain thoroughly.
  • Heat oil in a large frying pan over medium heat. Saute garlic and anchovies for 1-2 minutes until anchovies dissolve. Stir in tomatoes, tomato paste, chilli, olives, and capers. Cook for 5 minutes until tomatoes soften. Remove from heat and mix in cooked pasta, oregano, and parsley.
  • Transfer the pasta into individual bowls and serve promptly.
