Create a delicious Tater Tot casserole with creamy nacho cheese soup, seasoned ground beef, and melty Mexican cheese blend.
Ingredients:
  • cooking spray
  • 1 pound lean ground beef
  • 0.5 cup chopped green onion
  • 1 (1 ounce) package taco seasoning mix, divided
  • 1 (10.75 ounce) can tomato soup
  • 1 (10.75 ounce) can condensed nacho cheese soup (such as Campbell's® Fiesta Nacho Cheese Soup)
  • 1 (10.75 ounce) can milk
  • 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • 1.5 cups shredded Mexican cheese blend
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add ground beef, green onion, and 1/2 package taco seasoning. Cook and stir until beef is crumbly, browned, and no longer pink, for around 10 minutes. Drain off any excess grease.
  • In a saucepan, mix the remaining taco seasoning with tomato soup, nacho cheese soup, and milk. Heat the soup mixture until it starts boiling slightly.
  • Arrange the potato nuggets in the casserole dish.
  • Bake until the potato nuggets are crispy, about 10 minutes in the preheated oven.
  • Top potato nuggets with savory ground beef mixture and drizzle with creamy soup mixture.
  • Bake the soup mixture until it's bubbling, for 15 to 20 minutes. Sprinkle the casserole with Mexican cheese blend and bake until the cheese is melted, for 5 to 10 minutes.
