Fig and ginger Christmas pudding

🎉 Indulge in a luxurious steamed fig pudding for the holidays! 🌟
Ingredients:
  • 85g breadcrumbs
  • 437.50 ml chopped glace figs
  • 160ml rum
  • 150g brown sugar
  • 45g almond
  • 5.00 gm ground ginger
  • 2 tsp finely grated orange rind
Instructions:
  • Combine the figs and rum in a bowl, cover, and let sit overnight.
  • Prepare a 6-cup (1.5L) capacity pudding bowl by greasing it and lining the base with non-stick baking paper.
  • 1. Place a trivet or upturned saucer in a large deep pot. Check that the pudding bowl fits on top. 2. Remove the pudding bowl and fill the pot halfway with water. 3. Bring the pot to a boil over high heat.
  • Beat butter and sugar with electric beaters on medium speed for 5 minutes. Gradually add the eggs; don't worry if the mixture looks curdled.
  • Combine the almonds, breadcrumbs, flour, ginger, and orange rind, then gently mix and transfer the mixture into the prepared pudding bowl.
  • Cover a large pudding bowl with non-stick baking paper and lightly greased foil, making a pleat in the center to allow for expansion. Secure with a double length of string around the bowl.
  • Gently place the bowl on the trivet in the boiling water. Cover tightly and cook the pudding for 4 hours or until a skewer comes out clean. Monitor and refill water every 30 minutes. Serve with cream or custard.
