Fig and Goat Cheese Pizza

Versatile dish with sweet figs, savory onions, and tangy goat cheese on a flaky crust. Great for any occasion!
Ingredients:
  • 1 cup lukewarm water
  • 1 (.25 ounce) envelope active dry yeast
  • 3 cups all-purpose flour
  • 1 teaspoon vegetable oil
  • 1 teaspoon salt
  • 8 dried figs
  • 1 medium red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 teaspoon dried thyme
  • 1 teaspoon fennel seeds
  • 4 ounces goat cheese
  • 1 tablespoon olive oil, or as needed
Instructions:
  • In a large bowl, gently mix yeast into water and allow it to dissolve for a few minutes. Add oil, salt, and flour to form a dough. Once the dough becomes stiff, transfer it onto a floured surface and knead for about 5 minutes. Place the dough in an oiled bowl, cover it with a clean towel, and let it rise for approximately 45 minutes.
  • Place the figs in a small bowl and cover them with boiling water. Allow them to sit for approximately 10 minutes, then drain and chop them. Set aside for later use.
  • Heat 1 tablespoon of olive oil in a skillet until shimmering. Cook onions until soft and caramelized over low heat. Season with salt, then add thyme, fennel seed, and figs. Remove from heat.
  • 1. Preheat the oven to 450 degrees F (220 degrees C). 2. Flatten the pizza dough into a 1/4-inch thick circle and place it on a greased pizza pan. 3. Lightly brush the dough with olive oil. 4. Evenly spread the onion and fig mixture over the dough, it will be a thin layer bursting with flavor. 5. Top the pizza with pieces of goat cheese.
  • Bake until the crust turns golden brown at the edges, approximately 15 to 18 minutes in the preheated oven.
