Fig and honey glazed ham

Elevate your Christmas ham with a sweet and sticky glaze.
Ingredients:
  • 8kg cooked leg of ham
  • Whole cloves, to decorate
  • 284g jar fig jam
  • 89.38 gm honey
  • 23.40 gm dijon mustard
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Cut through the ham rind 8cm from the shank. Gently separate the rind from the fat using your thumb. Peel back the rind, removing it completely. Score the fat diagonally at 3cm intervals to create a diamond pattern, making sure not to cut too deeply. Add whole cloves for decoration and wrap the shank end in foil.
  • Combine the jam, honey, and mustard in a small saucepan over medium-high heat. Cook and stir for 5 minutes, or until the jam and honey have melted.
  • Place the ham on a wire rack in a roasting pan and pour boiling water into the pan until it reaches 2cm up the side. Brush the ham with 1/4 of the fig mixture. Bake for 1 hour 30 minutes, basting every 20 minutes with the remaining fig mixture until the ham turns golden. Remove foil from the shank before serving.
