Elevate fig and pecan slice with zesty lemon icing for extra decadence.
Ingredients:
  • 225g (1 1/2 cups) self-raising flour
  • 150g dried figs, finely chopped
  • 80g (1/2 cup, lightly packed) brown sugar
  • 70g (1/2 cup) pecan nuts, chopped
  • 125g butter, cubed, melted
  • 4.40 gm vanilla essence
  • 300g (2 cups) icing sugar mixture
  • 20g (1 tbsp) butter, at room temperature
  • 1 lemon, rind finely grated, juiced
Instructions:
  • Preheat your oven to 180°C. Line an 18 x 28cm slab pan with non-stick baking paper, making sure to leave an overhang on the sides.
  • In a medium bowl, gently sift together the flour and cinnamon. Add in the figs, sugar, and pecan nuts, and blend thoroughly. Incorporate the butter, eggs, and vanilla essence, stirring with a wooden spoon until fully combined.
  • Transfer the mixture into the pan, then spread it evenly using the back of a spoon. Bake in a preheated oven for 20 minutes, or until it's firm and lightly golden. Allow it to cool to room temperature before proceeding.
  • For the zesty lemon icing, combine icing sugar, butter, lemon rind, and 2 tablespoons of lemon juice in a medium bowl. Mix with a wooden spoon until smooth. Spread the icing over the cooled slice and let it set for 30 minutes before serving and slicing. Enjoy!
