Skip the store-bought Fig Newtons® and whip up a batch of delicious homemade fig preserves cookies instead.
Ingredients:
  • 2 cups fig preserves
  • 0.75 cup shortening
  • 2 eggs
  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 2 teaspoons baking powder
Instructions:
  • Preheat oven to 375°F (190°C) for a perfectly cooked dish.
  • Combine shortening, eggs, sugar, and vanilla until creamy. In a separate bowl, sift flour, soda, and baking powder. Gently fold the dry mixture into the egg mixture.
  • Prepare the small cookie sheet by greasing it with shortening, then evenly spread half of the dough onto the pan.
  • Spread the fig preserves evenly over the dough, then layer the remaining dough on top. Bake until the mixture softens, then spread the top layer. Bake for 40 minutes, allow to cool, and cut into 24 bars.
