Traditional Italian fig cookies, a cherished family recipe perfect for Christmas, pair beautifully with a steaming cup of coffee.
Ingredients:
  • 2 cups shortening
  • 3 cups white sugar
  • 6 eggs
  • 8 cups all-purpose flour
  • 7 teaspoons baking powder
  • 2 tablespoons vanilla extract
  • 1 pinch salt
  • 2 cups whole milk
  • 4 pounds dried figs
  • 1 pound raisins
  • 2 teaspoons ground cinnamon
  • 0.5 cup white sugar
  • 1 whole orange, with peel
  • 1 small apple
  • 1.5 cups chopped pecans
  • 1 cup water
Instructions:
  • Cream together the sugar and shortening until fluffy. Mix in eggs, vanilla, and salt. Gradually incorporate flour and baking powder by hand. Knead the dough until it is smooth and pliable, adding milk as needed to achieve the desired consistency. Trust your instincts and enjoy the process - you'll feel when the dough is just right.
  • Prepare the filling by dicing figs, orange, and apple into small pieces for easy grinding. Combine figs, raisins, orange, and apple in a grinder. Optionally, add up to 1 cup of water if the mixture needs moisture (I prefer using the natural juice from the apple and orange). Mix in spices and chopped nuts. Sprinkle them over the ground fig mixture and knead them in by hand until well combined. It may be sticky, but the result is delicious!
  • Preheat oven to 375°F (190°C) for the perfect cooking temperature.
  • Roll out the dough thinly. Lay down the fig mixture in a line. Encase the figs in the dough by wrapping it over the mixture and sealing it inside. Cut to your preferred length diagonally. Create small diagonal slits on the sides of the cookies. Bake on an ungreased cookie sheet for 10-15 minutes. Note: The dough can be used to make delicious cookies even without the filling. Enjoy with a cup of coffee for a delightful treat.
