Wow your guests with a sweet and savory appetizer featuring dried figs, creamy goat cheese, and caramelized onions.
Ingredients:
  • 0.25 cup canola oil
  • 1 large yellow onion, cut into thin slices
  • 0.25 cup small dried Mission figs
  • 6 ounces goat cheese, softened
  • 40 crackers
Instructions:
  • Heat a skillet over medium heat and add oil. Cook onion, stirring occasionally, until softened and translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and allow to cool.
  • After the onion has cooled, slice the figs lengthwise into 1/4-inch rounds.
  • Begin by delicately placing a smidgen of goat cheese, a hint of caramelized onions, and a couple of luscious fig slices onto each cracker.
