Figs with honey filo squares

Indulge in the sweet, seasonal flavor of figs with this easy-to-make tart.
Ingredients:
  • 40g (2 tbsp) butter
  • 60ml (1/4 cup) honey
  • 4 sheets filo pastry
  • 4 ripe figs, quartered lengthways
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat the oven to 180°C and prepare a baking tray with non-stick baking paper.
  • In a small saucepan, melt butter with 2 tablespoons (40ml) of honey over medium heat, stirring until well combined. (Refer to microwave tip if needed.)
  • Place one sheet of filo pastry on a flat surface. Brush it with some of the honey mixture. Layer another sheet on top and brush with more honey mixture. Continue layering the remaining filo sheets in the same way. Finish by brushing the top sheet with the honey mixture, fold in half crosswise, and brush again with the remaining honey mixture.
  • Cut the pastry into 4 squares, then diagonally into triangles. Arrange on the baking tray and bake in a preheated oven until beautifully golden brown, about 5-6 minutes.
  • Place 2 pastry triangles on each plate, add fig quarters, drizzle with remaining honey, and serve with ice cream.
