Caramelised figs with chocolate ricotta

Indulgent ricotta cheese drizzled with honey, served on ripe figs.
Ingredients:
  • 360g (1 1/2 cups) fresh ricotta
  • 60g good-quality dark chocolate, finely chopped
  • 40g (1/3 cup) diced dried apricot
  • 40.00 ml coarsely chopped pistachio kernels
  • 24.00 gm icing sugar mixture, sifted
  • 6 ripe figs
  • 42.90 gm honey
  • Honey, extra, to serve
Instructions:
  • Mix together creamy ricotta, rich chocolate, sweet apricot, crunchy pistachio, and powdered icing sugar in a bowl.
  • Preheat the grill to high heat. Halve each fig and place them cut-side up on a baking tray. Generously drizzle each fig half with 1/2 teaspoon of honey.
  • Grill figs for 2-3 minutes until lightly caramelized. Plate figs and top with ricotta mixture. Finish with a drizzle of honey before serving.
