Indulge in the perfect blend of sweet honey, creamy ricotta, crunchy pine nuts, and fresh figs in this exquisite dish.
Ingredients:
  • 1 x 50g pkt pine nuts
  • 200g fresh reduced-fat ricotta
  • 80ml (1/3 cup) blue gum honey
  • 8 fresh figs, cut in half
  • 40.00 ml mixed peel
Instructions:
  • In a heated small frying pan over medium-high heat, toast the pine nuts by stirring for 1-2 minutes until golden.
  • Mix the ricotta with half of the honey in a small bowl.
  • Place the figs on serving plates. Top them with a dollop of honey ricotta and drizzle with the remaining honey. Sprinkle with toasted pine nuts and mixed peel before serving promptly.
