Indulgent seared filet mignon with easy, rich Gorgonzola sauce for a romantic meal.
Ingredients:
  • 2 (6 ounce) filet mignon steaks
  • 1 teaspoon olive oil
  • salt and ground black pepper to taste
  • 1 tablespoon butter
  • 1 shallot, minced
  • 1 teaspoon minced garlic
  • 1 cup heavy cream
  • 4 ounces crumbled Gorgonzola cheese
Instructions:
  • Preheat the oven to a blazing 500 degrees F (260 degrees C) with a large oven-proof skillet inside to get it nice and hot.
  • Allow the steaks to come to room temperature, then coat them with olive oil and generously season with salt and pepper.
  • Carefully transfer the hot skillet from the oven to a burner set to high heat, while keeping the oven on.
  • Immediately place the steaks in the dry pan and sear on both sides for 1 to 2 minutes each, using tongs to turn.
  • Return the pan to the oven and cook for 3 to 5 minutes until reaching your desired doneness. For a medium cook, ensure the center temperature reads 140 degrees F (60 degrees C) with an instant-read thermometer. Place the steaks on a warm platter, cover loosely with foil, and let rest for 5 to 10 minutes to allow the steaks to continue cooking, with the internal temperature rising 5 to 10 degrees.
  • In a medium saucepan, melt butter over medium heat. Cook shallot and garlic until shallot is tender, about 5-7 minutes. Stir in cream and simmer until reduced by half, about 10 minutes. Reduce heat, stir in Gorgonzola cheese until melted. Season with salt and pepper. Serve with steaks.
