Filet Mignon with Creamy Blue Cheese Sauce (Cooking for 2)

Indulgent steak dinner ready in 35 minutes for your next romantic date night.
Ingredients:
  • 2 boneless beef tenderloin steaks, 1 1/2 inches thick
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped shallots
  • 1 teaspoon finely chopped garlic cloves
  • 1/2 cup Progresso™ beef-flavored broth (from 32-oz carton)
  • 1/2 cup dry white wine
  • 2/3 cup heavy whipping cream
  • 1/4 cup plus 2 tablespoons crumbled blue cheese
  • 2 tablespoons finely chopped chives
Instructions:
  • Season the steaks generously with salt and pepper. Heat 1 tablespoon of olive oil in an 8-inch skillet over medium-high heat. Sear the steaks, flipping only once, until they are beautifully browned on each side and cooked to your liking, approximately 5 minutes per side for a perfect medium-rare.
  • In a separate 8-inch skillet, warm the remaining 1 tablespoon of olive oil over medium heat. Sauté shallots for 3 minutes until soft, then add garlic and cook for 1 minute. Pour in broth and wine, bring to a boil, and simmer for 5 minutes. Stir in whipping cream and bring to a boil. Reduce heat and simmer for 7 to 10 minutes until slightly thickened. Whisk in 1/4 cup of blue cheese until smooth.
  • Drizzle sauce over the succulent steaks and sprinkle with the remaining 2 tablespoons of crumbled blue cheese and fresh chives for a delightful finish.
