Perfectly cooked beef tenderloin filets topped with a creamy shrimp sauce - an indulgent dish to savor together.
Ingredients:
  • 2 (4 ounce) 1 1/2 inch thick filet mignon steaks
  • salt to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 large shallot, minced
  • 2 tablespoons minced garlic
  • 0.25 cup Chardonnay wine
  • 0.5 pound uncooked shrimp - peeled, deveined, and cut into 3 pieces
  • 0.25 cup heavy cream
  • 1 tablespoon butter
  • salt and pepper to taste
Instructions:
  • Preheat a heavy skillet over medium-high heat. Coat each filet with 1 tablespoon olive oil, season with salt, and sear in the skillet until medium-rare, about 3 to 4 minutes per side. Verify doneness with an instant-read thermometer, ensuring it reaches 130 degrees F (54 degrees C). Rest the filets covered with foil before serving.
  • In a skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil until the butter stops foaming. Sauté the shallot and garlic until tender for about 2 minutes. Add the wine and cook until it reduces by half, around 3 minutes.
  • Combine the shrimp, cream, 1 tablespoon of butter, and a pinch of salt and pepper. Cook and stir until the sauce is thick and velvety, and the shrimp turn pink, approximately 2 minutes.
  • To present, arrange the filets on serving plates and generously spoon half of the flavorful shrimp sauce over each. The sauce will naturally thicken as it reaches the perfect serving temperature.
