Whip up a flavorful Filipino chicken curry loaded with veggies and spices, perfect over rice. No coconut milk needed!
Ingredients:
  • 3 tablespoons olive oil
  • 1 small onion, chopped
  • 0.5 teaspoon grated fresh ginger
  • 0.25 teaspoon garlic salt
  • 4 skinless, boneless chicken breast halves
  • 3 tablespoons curry powder
  • 1 teaspoon chicken bouillon granules
  • 1 teaspoon ground thyme
  • 1 potato, cubed
  • 1 green bell pepper, chopped
Instructions:
  • In a saucepan over medium-high heat, sauté onion, garlic, and ginger in olive oil. Sprinkle in garlic salt. Add chicken breasts and curry powder, cooking until chicken is no longer pink, around 5 minutes. Stir in chicken bouillon and thyme.
  • Once the chicken has browned, gently stream water into the saucepan and introduce the potatoes. Let them simmer until tender, approximately 10 minutes. Then, fold in the green bell pepper and continue simmering for an additional 5 minutes.
