Cozy up with a one-pot Filipino chicken sopas, a creamy macaroni soup, for the ultimate comfort food on a cold and rainy night.
Ingredients:
  • 6 cups water, or more as needed
  • 0.5 onion, chopped
  • 1 pound bone-in chicken thighs, skin removed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 carrots, diced
  • 2 tablespoons fish sauce, or more to taste
  • 4 teaspoons chicken bouillon granules
  • 0.5 (16 ounce) package elbow macaroni
  • 0.5 cup evaporated milk
  • 3 tablespoons butter
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a pot, simmer water and onion until boiling. Add chicken, garlic powder, and onion powder. Simmer gently until chicken thighs are tender, approximately 30 minutes.
  • Swap out the chicken for carrots in the broth before mixing in 2 tablespoons of fish sauce, chicken bouillon, and black pepper.
  • Separate chicken meat from bones, then add meat back to broth and simmer until carrots are tender, around 10 minutes. Stir in macaroni and cook until tender, approximately 20 minutes, adding extra water if necessary. Mix in evaporated milk and butter, simmer until butter is melted. Adjust seasoning with more fish sauce, salt, and pepper. Serve the soup in bowls.
