Indulge in a luxurious Filipino oxtail stew with eggplant, bok choy, and green beans in a decadent peanut sauce. Perfect over steaming rice.
Ingredients:
  • 1.5 pounds beef oxtail, cut into pieces
  • 1 large onion, quartered
  • 2 cloves garlic, chopped
  • 0.5 teaspoon ground black pepper, or to taste
  • 1 large eggplant, cut into 2-inch chunks
  • 0.5 head bok choy, cut into 1-inch pieces
  • 0.5 pound fresh green beans, trimmed and snapped into 2-inch pieces
  • 0.25 cup peanut butter, or as needed to thicken sauce
Instructions:
  • In a large saucepan, combine water, oxtail, onion, garlic, salt, and pepper. Bring to a boil, then simmer over medium-low heat for 2 hours. Occasionally skim off any foam. Cook until the oxtail meat is very tender and the broth reduces to 3 cups.
  • Combine the eggplant, bok choy, and green beans in the pot and simmer for 20 minutes until the vegetables are tender.
  • Before serving, combine peanut butter in a small bowl with 1 or 2 tablespoons of broth to create a smooth mixture. Stir this into the stew.
