Golden-baked Filipino pandesal, a sweet breakfast roll with a fine bread crumb crust.
Ingredients:
  • 1 teaspoon active dry yeast
  • 1 cup lukewarm water
  • 1 teaspoon white sugar
  • 0.25 cup white sugar
  • 0.125 cup vegetable oil
  • 1 teaspoon fine salt
  • 3 cups all-purpose flour, divided
  • 0.125 cup fine bread crumbs, divided, or as needed
Instructions:
  • Combine yeast with water and sprinkle in 1 teaspoon of sugar. Let it sit for about 7 minutes to soften.
  • In a bowl, combine 1/4 cup of sugar, oil, and salt. Stir in the softened yeast mixture and half of the flour. Mix thoroughly. Gradually incorporate the rest of the flour, stirring continuously, until the dough pulls away from the sides of the bowl.
  • Transfer the dough to a lightly floured work surface and knead until smooth. Shape into a ball and place in a lightly greased bowl. Brush the dough with more vegetable oil, cover with a damp cloth, and allow it to rise in a warm place until doubled in size, approximately 2 hours.
  • Gently deflate dough and shape into 2-inch rounds. Sprinkle rolls generously with half of the fine bread crumbs and allow to double in size, 15 to 20 minutes.
  • Preheat the oven to 375°F (190°C) for baking perfection.
  • Cut the rounds into 1 1/2-inch pieces and place them on a lightly greased baking sheet, cut-side up. Sprinkle with the remaining bread crumbs and allow them to double in size, approximately 30 minutes more.
  • Bake until golden brown in a preheated oven, 20-25 minutes.
