Fingerling Potato Salad with Bacon and Gorgonzola

Gourmet potato salad with fingerling potatoes, bacon, shallots, and creamy gorgonzola cheese.
Ingredients:
  • 1 lb fingerling potatoes, cut in half lengthwise
  • 1/3 cup light mayonnaise
  • 4 slices bacon
  • 1/2 cup gorgonzola cheese, crumbled
  • 1/4 cup shallots, chopped
  • Dash ground red pepper (cayenne)
  • Italian flat-leaf parsley, chopped for garnishing
Instructions:
  • Cook potatoes in a large pot of boiling salted water until tender, for about 10 minutes. Drain and cool potatoes to room temperature.
  • Cook the bacon until it is crispy, then place it on paper towels to drain before crumbling it.
  • Combine potatoes, bacon, gorgonzola, shallots, and mayonnaise in a large bowl, gently folding to mix all ingredients evenly.
  • Season with a pinch of salt and a sprinkle of cayenne for a flavorful kick.
  • Sprinkle with fresh parsley just before serving and enjoy within two hours.
