Versatile fingerling potatoes roasted with flavorful Parmesan, garlic, and parsley - a perfect side for any dish!
Ingredients:
  • 1 pound fingerling potatoes, halved lengthwise
  • 2 cloves garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 tablespoon butter
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Combine potatoes, garlic, Parmesan cheese, lemon zest, salt, and black pepper in a bowl. Drizzle with olive oil and toss until everything is evenly coated.
  • Preheat a cast-iron skillet over medium-high heat until hot. Melt the butter in the skillet. Add potatoes and toss for 2 minutes until they are coated with butter. Transfer the skillet to the preheated oven.
  • Roast in the preheated oven, tossing halfway through, for 15-20 minutes until tender. Sprinkle with fresh parsley before serving.
