Elevate fingerling potatoes with garlic, lemon, parboiling, and grilling for the perfect side to your favorite steak.
Ingredients:
  • 2 1/2 teaspoons kosher salt, divided
  • 1 1/2 pound fingerling potatoes, cut in half lengthwise
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon granulated garlic
  • 1 lemon, halved
  • 1 tablespoon chopped fresh Italian parsley
Instructions:
  • Get the grill ready by setting up a two-zone fire to achieve a medium-high heat of 375º to 425º F.
  • Prepare the potatoes: Boil 2 quarts of water in a large pot on the stovetop. Season with 2 teaspoons of salt, then add the sliced potatoes. Boil for 6-9 minutes until tender when pierced with a knife. Drain in a colander and set aside.
  • Enhance the flavor of the potatoes by coating them in a mixture of olive oil, 1/2 teaspoon of salt, pepper, and garlic in a large bowl.
  • Grill the potatoes, cut side down, over direct heat until charred, about 3 minutes, then flip and grill for another 3 minutes. Grill the lemon, flesh side down, until charred, about 3 minutes.
  • To serve, take the potatoes and lemon off the grill. Place the potatoes in a bowl, drizzle with the grilled lemon juice, and toss. Sprinkle with parsley before serving. Enjoy the dish? Show your love by giving us stars and leaving a comment!
