Thin Finnish pancake stack - easy, delightful crepe-like breakfast.
Ingredients:
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 2 eggs
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon salt
Instructions:
  • In a microwave-safe bowl, warm the milk for 20 to 30 seconds. Whisk in the butter, followed by the eggs. Add flour, baking powder, vanilla extract, and salt. Use an immersion blender to quickly blend everything into a smooth batter.
  • Preheat a lightly oiled griddle over medium-high heat. Spoon batter onto the griddle, cooking until the bottom is golden brown for 2 to 3 minutes. Flip and cook the other side until browned, another 2 to 3 minutes. Continue with the rest of the batter.
