Savor Spain with zesty gazpacho made with fire-roasted tomatoes, cucumber, pepper, onion, and cilantro.
Ingredients:
  • 1 can (14.5 oz) Muir Glen™ organic fire-roasted diced tomatoes, undrained
  • 1 1/2 cups tomato juice
  • 1 small cucumber, peeled, chopped (1 cup)
  • 1/4 cup finely chopped red bell pepper
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons finely chopped fresh cilantro
  • 2 teaspoons white wine vinegar
Instructions:
  • Add all ingredients to the food processor and pulse in short bursts until mixture is roughly pureed.
  • Chill in the refrigerator for at least 1 hour to enhance flavors before serving.
