Firecracker Shrimp

Coat shrimp in sweet and spicy sauce, then stir-fry in wok for delicious firecracker shrimp.
Ingredients:
  • 1/4 cup sweet chili sauce
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon sriracha
  • 1 tablespoon less sodium soy sauce
  • 1 pound medium shrimp (41-50), peeled and deveined
  • 1/4 teaspoons salt
  • 2 tablespoons cornstarch
  • 2 tablespoons peanut oil
  • 4 cups hot cooked white rice
  • 2 tablespoons bias-sliced green onions
  • 1 1/2 teaspoons toasted sesame seeds
Instructions:
  • Assemble all ingredients.
  • Combine sweet chili sauce, lime zest, lime juice, sriracha, and soy sauce, creating a flavorful sauce with a perfect balance of sweet, tangy, and spicy notes.
  • Pat the shrimp dry using paper towels, then season with salt.
  • Coat shrimp with cornstarch by tossing in a medium bowl.
  • In a wok or extra-large nonstick skillet over medium-high heat, sizzle shrimp in hot oil until they turn opaque, approximately 2 to 3 minutes. Take them out of the wok.
  • Pour the sauce mixture into the wok and bring it to a boil.
  • Toss shrimp back into the wok and ensure they are evenly coated.
  • Present the Firecracker Shrimp atop a bed of fluffy rice. Sprinkle with fresh green onion and toasted sesame seeds for the finishing touch.
