  • 180g dried ramen noodles
  • 2 tsp vegetable stock powder
  • 1250.00 gm boiling water
  • 2cm piece fresh ginger, quartered
  • 42.00 gm soy sauce
  • 1/2 tsp sesame oil

  • 1 large carrot, peeled, cut into matchsticks
  • 300g flathead fillets, cut into 1.5cm-thick slices (see note)
Instructions:
  • Boil noodles in water until tender, then drain and keep warm in a bowl. In a separate saucepan, mix stock powder with 5 cups of boiling water over medium-high heat. Stir in ginger, soy sauce, and oil, and bring to a boil.
  • Combine the fragrant onion, sweet carrot, and fresh fish in the flavorful stock. Bring the mixture to a boil, then adjust the heat to medium and simmer for just 1 minute until the fish is perfectly cooked.
