Succulent white fish simmered in savory tomato sauce with aromatic veggies - perfect for any delicate fish like sole.
Ingredients:
  • salt and pepper
  • 0.25 cup olive oil
  • 0.25 cup fresh parsley, minced
  • 8 ounces pimento, chopped
  • 1 (28 ounce) can tomato puree
  • 3 tomatoes, chopped
  • 2 carrot, sliced
  • 2 strips celery, sliced
  • 2 cloves garlic, minced
  • water
  • 3 tablespoons fresh lemon juice
  • 6 (3 ounce) fillets cod
  • 1 teaspoon white sugar
Instructions:
  • In a large saucepan, combine parsley, pimento, salt, pepper, tomato sauce, and fresh tomatoes. Bring to a boil, then add carrots, celery, and garlic. Simmer until carrots are tender yet firm.
  • Pour a splash of water and squeeze in the juice of 1 lemon. Gently place the fish in the pan without mixing. Scoop up the liquid to drizzle over the fish. Sprinkle in the sugar.
  • Once the fish is cooked, remove it from the heat and allow it to cool before serving cold.
