Zesty pickled veggie vermicelli with flavorful Asian pork for a protein-packed dish.
Ingredients:
  • 1/2 carrot, cut into thin strips
  • 1/2 long red chilli, cut into thin strips
  • 1/2 Lebanese cucumber, cut into thin strips
  • 40.00 ml rice vinegar
  • 50g vermicelli noodles, cooked according to packet instructions
  • 1 tsp five-spice powder
  • 9.20 gm olive oil
  • 200g pork fillet, trimmed
  • 1 rice paper wrapper
  • 5.50 gm sweet chilli sauce
  • 6.10 gm oyster sauce
  • 21.00 gm soy sauce
  • Juice of 1/2 lime, plus wedges to serve
  • Mint leaves, to serve
Instructions:
  • Preheat your oven to 190C and prepare a baking tray by lining it with baking paper.
  • Mix together the carrots, chili, cucumber, sugar, and vinegar, then let them marinate for 20 minutes. Afterward, drain the vegetables and mix them with the cooked noodles.
  • Combine the fragrant five-spice and oil in a bowl, then toss in the pork to coat it evenly. Sear the pork in a heated fry pan for about 6 minutes until it develops a delicious char. Transfer the pork to a baking tray and roast for 4-5 minutes until perfectly cooked.
  • Soak the rice paper wrapper as directed on the package. Mix the sauces and lime juice in a bowl.
  • Cover the rice paper wrapper with the noodle mixture and sliced pork. Accompany with lime wedges, fresh mint, and dipping sauce on the side.
