Five-spice vegetable stir-fry

Try a vibrant and spicy Asian-inspired dish to boost your veggie consumption in a delicious and nutritious way.
Ingredients:
  • 3.75 gm cornflour
  • 42.00 gm light soy sauce
  • 40.00 ml Chinese rice wine (shaohsing)* or dry sherry
  • 5.00 gm caster sugar
  • 2 tsp five-spice powder
  • 2 red capsicums, thinly sliced
  • 1 yellow capsicum, thinly sliced
  • 2 bunches broccolini, trimmed, halved on the diagonal
  • 200g fresh shiitake mushrooms*, thinly sliced
  • 275g rice
Instructions:
  • In a bowl, mix cornflour and 1/3 cup (80ml) cold water. Stir in soy sauce, Chinese rice wine, sugar, and five-spice until well combined. Heat oil in a wok over high heat until smoking.
  • Sauté the vegetables for 2 minutes, then add the sauce and cook for 2 more minutes until the vegetables are tender-crisp and the sauce has thickened.
  • Plate the stir-fry and serve with steamed rice.
