Elevate your leftover salmon with a zesty Dijon mustard, lemon, and caper salad.
Ingredients:
  • 0.25 cup nonfat plain yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon freshly squeezed lemon juice
  • 1 medium scallion, chopped
  • 1.5 teaspoons capers, drained and chopped
  • 1.5 teaspoons chopped fresh dill
  • salt and ground black pepper to taste
  • 1.5 cups cooked flaked salmon
Instructions:
  • In a bowl, combine yogurt, mayonnaise, mustard, and lemon juice. Add scallion, capers, and dill; season with salt and pepper. Gently mix in flaked salmon.
