Light pasta salad with flaked salmon, fresh lemon, and dill tossed in zesty vinaigrette.
Ingredients:
  • 0.5 (16 ounce) package large shell pasta
  • 1 tablespoon lemon-infused olive oil
  • 1 tablespoon finely minced shallot
  • 2 teaspoons lemon juice
  • 2 teaspoons capers
  • 1.5 teaspoons chopped fresh dill
  • 1 lemon, zested
  • 1 teaspoon minced garlic
  • salt and ground black pepper to taste
  • 0.5 pound cooked salmon fillet, flaked
  • 1 tablespoon freshly grated Parmesan cheese, or to taste
Instructions:
  • 1. Boil a large pot of salted water until bubbling. Add in the shells and cook, stirring occasionally, until they are tender but still slightly firm, approximately 9 minutes.
  • In a large bowl, mix together oil, shallots, lemon juice, capers, dill, lemon zest, garlic, salt, and pepper. Stir well. Then add the flaked salmon and mix thoroughly.
  • After cooking the pasta, discard excess water and mix it with the salmon blend. Combine thoroughly. Chill for a minimum of 30 minutes before serving. Sprinkle with freshly grated Parmesan cheese before enjoying.
