Irresistibly sweet dessert to satisfy cravings.
Ingredients:
  • 110g caster sugar
  • 395g can sweetened condensed milk
  • 4.40 gm vanilla extract
  • 4 eggs
  • Thin cream, to serve
Instructions:
  • Preheat the oven to 170°C and lightly grease six 3/4-cup (185ml) ramekins.
  • In a saucepan, combine sugar and 1/4 cup (60ml) water. Stir over gentle heat until sugar is dissolved. Let it simmer for 10-15 minutes until golden brown. Quickly pour into molds, swirl to coat, and let cool.
  • Whisk condensed milk, vanilla, and eggs in a bowl until smooth. Then, strain the mixture into a lipped jug.
  • Place the caramel-lined moulds in a roasting pan and evenly distribute the milk mixture among them. Fill the pan with boiling water until it reaches halfway up the sides of the moulds. Cover the pan with foil and bake for 35 minutes or until the mixture is just set. Once ready, take the moulds out of the pan, let them cool, and refrigerate for a minimum of 6 hours. For make-ahead convenience, the dessert can be stored in the fridge for up to 2 days.
  • Minutes before serving, gently dip the bottom of each mold into a bowl of warm water for approximately 30 seconds, followed by running a knife around the edges to release the dessert. Invert into shallow bowls to elegantly release the caramel. Enjoy with a dollop of thin cream, if preferred.
