Whip up a quick and special breakfast or brunch for two in just 15 minutes!
Ingredients:
  • 1/4 cup Yoplait® Original plain yogurt (from 6-oz container)
  • 1 tablespoon light mayonnaise
  • 1/2 teaspoon Dijon mustard
  • 2 eggs
  • 1 English muffin, split, toasted
  • 1/2 cup fresh baby spinach leaves
  • Dash pepper
Instructions:
  • In a small microwave-safe bowl, combine yogurt, mayonnaise, and mustard. Microwave on High for 20 to 40 seconds until warm. Stir well and set aside.
  • Heat water in a 10-inch skillet until boiling, then reduce heat to medium-low. Crack each egg into a shallow dish, then gently transfer them into the hot water. Use a spoon to carefully pour hot water over the eggs until a film forms over the yolks. Cook for 3 to 5 minutes until the eggs reach your preferred level of doneness.
  • Spread a generous 2 tablespoons of sauce on each English muffin half, then layer each with a generous portion of spinach leaves.
  • Using a slotted spoon, transfer the eggs from the water onto the bed of spinach. Spoon half of the remaining sauce over each egg and finish with a sprinkle of pepper.
