Florentine-inspired breakfast: Eggs with spinach, mushrooms, tomatoes, and mozzarella cheese.
Ingredients:
  • 6 large eggs
  • 1 tablespoon milk
  • salt and ground black pepper to taste
  • 3 tablespoons olive oil
  • 1 tablespoon sliced onion, or to taste
  • 0.5 cup sliced baby bella mushrooms
  • 0.5 cup fresh spinach, or to taste
  • 4 cherry tomatoes, sliced
  • 2 tablespoons shredded mozzarella cheese, or to taste
  • 2 tablespoons grated Parmesan cheese, or to taste
Instructions:
  • Whisk eggs, milk, and a pinch of salt in a bowl until combined.
  • In a skillet over medium heat, sauté onion and garlic in olive oil until onions are soft, about 5-10 minutes. Then add mushrooms, spinach, and cherry tomatoes; continue to cook until spinach wilts, about 3-5 minutes.
  • Pour the velvety egg mixture over the colorful vegetables and cook until the eggs are lusciously soft and partially cooked, for about 2 to 3 minutes. Sprinkle in the creamy mozzarella and Parmesan cheeses, continuing to cook until the eggs are perfectly set and the cheeses have melted beautifully, for an additional 3 to 4 minutes. Season with a touch of salt and pepper to enhance the flavors.
