Chicken breast seasoned with Creole spices, topped with bacon and Brie, wrapped in puff pastry and baked to golden perfection - a delicious twist on the classic Wellington dish.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 4 skinless, boneless chicken breast halves, thinly sliced
  • 2 teaspoons Creole seasoning
  • 1 teaspoon ground black pepper
  • 2 sheets frozen puff pastry, thawed
  • 4 slices cooked bacon, crumbled
  • 4 ounces Brie cheese, cut into 4 slices
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and grease a baking sheet.
  • In a skillet over medium heat, warm up olive oil until sizzling. Season chicken breasts generously with Creole seasoning, salt, and pepper. Sear until beautifully browned on both sides, around 2 minutes per side. Let them rest on a plate.
  • Cut each puff pastry sheet in half. Top each half with a sliced chicken breast, bacon, and Brie cheese. Fold the pastry over the chicken, pressing the seams to seal, then place seam-side down on the baking sheet.
  • Bake in the preheated oven for 15 to 20 minutes until the pastry is golden brown and the chicken is cooked through. Ensure the internal temperature is 165 degrees F (74 degrees C) using an instant-read thermometer.
