Florida Key Lime Pie

Whisk lime juice, zest, cream cheese, condensed milk. Fill crust, top with whipped cream, chill. Enjoy tangy, creamy key lime pie!
Ingredients:
  • 1 (9 inch) prepared graham cracker crust
  • 2 (8 ounce) packages cream cheese, softened
  • 2 (14 ounce) cans low-fat sweetened condensed milk
  • 0.75 cup key lime juice
  • 1 teaspoon grated lime zest
  • 0.25 teaspoon salt
  • 1 cup heavy cream, chilled
  • 3 tablespoons confectioners' sugar
Instructions:
  • For Lime Filling: In a large mixing bowl, beat cream cheese until fluffy. Mix in condensed milk, lime juice, lime rind, and salt until smooth. Spread filling into graham cracker crust, cover with plastic wrap, and chill completely.
  • Make the topping by whisking cream in a medium bowl until it forms soft peaks. Add vanilla or lemon extract and confectioners' sugar, continue whisking until stiff peaks form. Strain the topping through a fine-mesh sieve over a bowl to catch excess liquid. Cover tightly with plastic wrap and let it drain for 2 hours.
  • Drain any excess liquid from topping before spreading it over the pie.
