Flourless Eggplant Pizza

Eggplant crust mini-pizzas customizable with your favorite toppings.
Ingredients:
  • 0.5 large eggplant, sliced into thin rounds
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon extra virgin olive oil
  • 0.33333334326744 cup tomato sauce
  • 0.33333334326744 cup shredded Cheddar cheese
  • salt and ground black pepper to taste
Instructions:
  • Heat your oven to 350°F (175°C).
  • Place the eggplant rounds onto a baking sheet and give them a delicate drizzle of olive oil.
  • Place the eggplant rounds in a preheated oven and bake until hot, approximately 5 minutes.
  • Arrange the eggplant rounds and sprinkle a generous layer of Parmesan cheese on top. Bake until the cheese is perfectly melted, approximately 5 minutes.
  • Place a generous spoonful of tomato sauce in the center of each eggplant round and sprinkle with Cheddar cheese.
  • Continue baking until the Cheddar cheese is bubbly, approximately 5 more minutes. Season with salt and pepper before serving.
