Whip up flourless triple chocolate cookies for a quick, easy, and irresistible gluten-free treat.
Ingredients:
  • cooking spray
  • 1 cup finely chopped bittersweet chocolate
  • 3 egg whites, at room temperature
  • 2 cups confectioners' sugar, divided
  • 0.5 cup unsweetened cocoa powder
  • 1 tablespoon cornstarch
  • 0.5 cup chopped dark chocolate
  • 0.25 teaspoon coarse sea salt
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and generously spray 2 baking sheets with cooking spray.
  • Melt bittersweet chocolate in a double boiler, stirring often and scraping the sides with a rubber spatula to prevent burning. Remove from heat and cool slightly.
  • Use an electric mixer to whip egg whites in a large bowl until soft peaks form; gradually add 1 cup of confectioners' sugar until the mixture resembles soft marshmallow creme.
  • In a bowl, combine 1/2 cup confectioners' sugar, cocoa powder, cornstarch, and salt, whisking them together. Then, gently beat the confectioners' sugar mixture into the egg white mixture on low speed until a soft meringue forms. Finally, fold in the cooled melted bittersweet chocolate and dark chocolate until the dough becomes stiff.
  • Dust a bowl with the remaining 1/2 cup confectioners' sugar. Roll 1 rounded tablespoon of dough into a ball, generously coating all sides with the sugar. Repeat with the rest of the dough. Place cookies 2 inches apart on baking sheets and sprinkle each with coarse salt.
  • Bake in the preheated oven for 9 to 10 minutes until the tops crack. Allow the cookies to cool on the baking sheets for 10 minutes, then transfer to a wire rack to cool completely.
