Whip up cheesy puffs with Gold Medal® flour in just 50 minutes. A perfect appetizer addition for any occasion!
Ingredients:
  • 3/4 cup water
  • 1/4 cup butter or margarine, cut up
  • 3/4 cup Gold Medal™ all-purpose flour
  • 3 eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons finely chopped fresh chives
  • 2 tablespoons finely chopped fresh basil leaves
Instructions:
  • Preheat oven to 425°F and prepare 2 cookie sheets with parchment paper. In a 2-quart saucepan, bring water, butter, and salt to a rolling boil over medium heat. Remove from heat once butter is melted, then quickly stir in flour until well combined.
  • Return the pan to medium heat and stir constantly for 1 to 1 1/2 minutes until the dough forms a ball and leaves a slight film on the side of the pan.
  • Take the mixture off the heat and add the eggs one by one, mixing until fully combined. Gently fold in the Parmesan cheese, chives, and basil. Spoon heaping teaspoonfuls of the mixture onto cookie sheets, spacing them 2 inches apart to form 30 1 1/4-inch mounds.
  • Bake for approximately 20 minutes, or until beautifully golden brown and fully set. Remove from the oven, and using the tip of a sharp knife, gently make a small slit on the side of each puff to release steam. Return to the oven and bake for an additional 5 to 8 minutes, or until the puffs are dry and firm.
